And we know the universe is expanding because we look at the redshifts of other galaxies and from those redshifts we observe that everything is moving away from us but more then that every point in the universe is moving away from every other part of the universe. Its rather like taking a radar gun and realizing that everyone is moving away from you so you move to another spot and then realize everyone is moving away from you again. The edge is not expanding at all but rather space is being stretched I explained this in a post above if you care to scroll up. "universal expansion" is not like throwing a bunch of baseballs into a field farther and farther apart from each other but rather that the very space itself is stretching almost as if you inflate a balloon, we do not notice this here on earth because the gravitational field (among other forces) that we are in within the solar system is large enough to counteract this effect. I hope that answers your #1 question as the second question is philosophical mostly as we yet do not have the tools to really evaluate that question currently.
